Ingredients

Weights refer to the preparation listed, before cooking unless stated otherwise. Tap an ingredient to see its source.

Your selected servings and scaled amounts go into the calculator, where you can adjust ingredients individually.

STEP BY STEP

Let’s make it.

  1. Heat the oven to 350°F (175°C). Line a tray. Mix the almond meal, cocoa, baking powder and salt, breaking up any lumps.
  2. Whisk the egg, butter, sugar and vanilla. Stir into the dry mixture and chill for 10 minutes to make the dough easier to shape.
  3. Divide into 12 balls and flatten slightly on the tray. Leave space around each cookie.
  4. Bake for 12–16 minutes until the edges are set and the centers are no longer wet. Small cracks may form as the cookies spread.
  5. Cool on the tray for 10 minutes, then transfer to a rack. Divide into 12 servings.

Kitchen notes

  • There is no powdered-sugar coating; the cocoa flavor stays prominent and the listed sugar is included in the calculation.
