STEP BY STEP

Let’s make it.

  1. Heat the oven to 375°F (190°C) and line two trays. Mix the coconut, ground flax, almond meal, baking powder and salt.
  2. Stir in the eggs, water and oil. Rest for 10 minutes, until the mixture forms a thick, spreadable dough.
  3. Divide into 6 portions. Press each portion between sheets of baking paper into a round about 12 cm wide and 4–5 mm thick; peel off the upper sheet.
  4. Bake for 18–23 minutes, rotating trays halfway through, until the edges color and the centers are set. Do not bake until hard if you want soft flatbreads.
  5. Cool for 5 minutes before lifting from the paper. Divide into 6 servings.

Kitchen notes

  • Use ground desiccated coconut, not coconut flour; their absorbency is very different. These are small flatbreads rather than flexible wheat wraps.
