STEP BY STEP
Let’s make it.
- Heat the oven to 340°F (170°C). Line the base and sides of a 20 cm round cake tin. Mix the almond meal, baking powder and salt.
- Whisk the ricotta, sugar and eggs until smooth. Whisk in the cooled melted butter, lemon juice and vanilla.
- Fold in the dry ingredients just until combined. Scrape into the tin and level the top.
- Bake for 40–50 minutes until lightly golden and set, with no wet batter on a skewer. Cover loosely with foil if the top colors early.
- Cool in the tin for 10 minutes, then carefully lift onto a rack. Cool fully before cutting into 10 servings.
