STEP BY STEP

Let’s make it.

  1. Heat the oven to 375°F (190°C). Line a roughly 20 cm square baking tin. Mix the almond meal, baking powder, salt and half the thyme.
  2. Whisk the eggs, yogurt, water and two-thirds of the oil, then stir into the dry ingredients to make a thick batter.
  3. Spread in the lined tin, about 2 cm deep. Drizzle with the remaining oil and make shallow dimples with the back of a damp teaspoon. Scatter the remaining thyme over the top.
  4. Bake for 22–28 minutes until golden and set in the middle, with no wet batter on a skewer.
  5. Cool for 10 minutes before lifting out. Cut into 8 servings and serve warm or at room temperature.
