STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Line 12 muffin cups. Mix the almond meal, sugar, baking powder and salt.
- Whisk the egg whites by hand just until foamy; do not whip to peaks. Stir in the butter and vanilla.
- Fold the wet mixture into the dry ingredients. Divide evenly among the cups to make shallow cakes, roughly half a muffin cup deep.
- Bake for 18–23 minutes until the edges are golden and the centers spring back lightly with no wet batter on a skewer.
- Cool in the tin for 5 minutes, then transfer to a rack and divide into 12 servings.
Kitchen notes
- Weigh the egg whites rather than counting eggs. These small cakes contain sugar and have an almond texture.
