STEP BY STEP
Let’s make it.
- Heat the oven to 325°F (165°C) and line a tray. Whisk the egg whites, sugar, vanilla and salt by hand until frothy; firm peaks are not needed.
- Stir in the desiccated coconut until every strand is moistened. Leave for 5 minutes so the coconut absorbs some liquid.
- Divide into 12 compact mounds, pressing each together with damp hands or two spoons. Set them on the tray with a little space between.
- Bake for 20–25 minutes, until the tips and bases are golden and the centers are set, reaching at least 160°F (71°C).
- Cool on the tray for 5 minutes before moving to a rack. Divide into 12 servings.
Kitchen notes
- Use unsweetened desiccated coconut, not sweetened flakes or coconut flour. These macaroons are chewy rather than crisp.
