STEP BY STEP

Let’s make it.

  1. Heat the oven to 400°F (200°C). Toss cauliflower with the oil, paprika and half the salt; spread on one side of a lined roasting tray.
  2. Mix beef, beaten egg, feta, spinach, onion, oregano, pepper and remaining salt just until combined. Shape into 4 small loaves on the other side of the tray.
  3. Stir the tomato paste and measured water into a thin glaze. Brush all of it over the loaves.
  4. Roast for 25–30 minutes, stirring the cauliflower once. Check the center of every loaf reaches 160°F (71°C); continue cooking if needed.
  5. Rest the loaves for 5 minutes. Divide the loaves, cauliflower and tray juices into 4 servings.
