STEP BY STEP
Let’s make it.
- Wash and thoroughly dry the romaine leaves. Dice the avocado and tomato and toss them with the lemon juice. Grate the cheddar and set the toppings aside.
- Heat the olive oil in a skillet over medium-high heat. Add the onion and cook for 3 minutes. Add the ground beef and cook, breaking it up, for 7–9 minutes until it reaches 160°F (71.1°C).
- Stir in the garlic, cumin, paprika, oregano, salt and pepper. Cook for 30 seconds, then add the measured water.
- Simmer uncovered for 2–3 minutes, until the beef is juicy but not watery. Keep all the beef mixture for serving.
- Divide the beef between 12 lettuce leaves. Add the avocado-tomato mixture and cheddar. Serve three filled leaves per person, distributing all toppings evenly.
Kitchen notes
- Use two smaller leaves together if a leaf is too delicate to hold the filling.
- The spice mixture is made from individual seasonings. Packaged taco seasoning may have different carbohydrate values.
