STEP BY STEP
Let’s make it.
- Prepare the broccoli, garlic and parsley. Pat the steaks dry and season both sides with half the salt and pepper.
- Put the broccoli in a steamer over simmering water, keeping the food above the water. Cover and steam for 5–7 minutes, until just tender. Drain any surface moisture.
- Heat a large heavy skillet over medium-high heat. Add the olive oil, then the steaks. Cook for about 3–5 minutes per side, adjusting for thickness, until the center reaches at least 145°F (63°C). Check with a food thermometer.
- Move the steaks to a clean plate and rest for at least 3 minutes. Lower the skillet heat. Add the butter and garlic; stir for about 30–60 seconds without letting the garlic brown.
- Add the broccoli, lemon juice, parsley and remaining salt and pepper to the garlic butter. Toss for 1–2 minutes. Slice the rested steaks and divide the steak, broccoli and all pan juices into 2 servings.
Kitchen notes
- Use a pan large enough to hold the steaks without crowding; a second pan may be needed for thicker pieces.
