STEP BY STEP
Let’s make it.
- Steam broccoli above simmering water for 4–5 minutes, until bright green and crisp-tender. Spread in a shallow container and refrigerate until cold, about 30 minutes.
- Toast chopped almonds in a dry skillet over medium heat for 2–3 minutes, stirring. Tip onto a plate to cool.
- Whisk oil, lemon juice, mustard, salt and pepper together. Toss with the cold broccoli and parsley.
- Divide into 4 servings and scatter with all the toasted almonds just before serving.

- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
