STEP BY STEP
Let’s make it.
- Separate 8 lettuce leaves and dry them well. Chop any remaining listed lettuce into the filling.
- Peel the lime and remove tough membrane and seeds. Finely chop and weigh the edible flesh, retaining all its juice.
- Gently combine avocado, cucumber, tomato and chopped lettuce with lime, oil, parsley, salt and pepper.
- Fill the leaves and divide into 4 servings, two cups per person. Serve chilled soon after assembling.

- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
