STEP BY STEP
Let’s make it.
- Cut cucumber into 12 thick rounds. Scoop a shallow hollow into each, keeping the base intact; finely chop the removed centers.
- Blend feta, yogurt, lemon juice, oil and pepper until creamy. Fold in parsley and the cucumber centers.
- Spoon the filling into the cups and refrigerate until served.
- Divide into 4 servings, with three cups per person.

- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
