STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Line 12 muffin cups with baking-paper liners.
- Steam the broccoli with the measured water in a covered pan for 3–4 minutes. Drain thoroughly and let cool briefly.
- Whisk the eggs, cream, mustard, salt and pepper. Fold in the cheddar and broccoli.
- Divide among the cups, filling each about three-quarters full. Bake for 20–25 minutes until the centers are set and reach 160°F (71°C).
- Cool for 5 minutes before removing from the tin. Divide into 6 servings; the original serving is two mini quiches.
Kitchen notes
- Silicone muffin cups also work. Choose vegetarian-rennet cheddar if needed.
