STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Mix the almond meal, butter, 50 g beaten egg and one-third of the salt. Press into a lined 23 cm tart tin, covering the base and sides. Prick the base and bake for 12 minutes.
- Heat the oil in a skillet. Cook the diced chicken for 6–8 minutes until it reaches 165°F (74°C). Add the garlic and spinach and cook until the spinach wilts and excess liquid evaporates.
- Whisk the remaining egg with the cream, pepper and remaining salt. Spread the chicken and spinach in the part-baked crust and scatter with mozzarella.
- Pour in the egg mixture and bake for 25–35 minutes, until the middle is set and reaches 165°F (74°C). Shield the crust edges if needed.
- Rest for 10 minutes before cutting into 6 servings.
Kitchen notes
- The chicken is weighed raw; cook it before filling the tart. The egg amount in the crust scales with the selected servings.
