Let’s make it.

  1. Heat the oven to 350°F (175°C). Line 8 muffin cups with baking-paper liners. Wilt the spinach in a covered dry pan, cool briefly, then squeeze out excess liquid.
  2. Mix the almond meal, baking powder, salt and pepper. In a second bowl whisk the eggs, yogurt and oil.
