STEP BY STEP
Let’s make it.
- Use cooked chicken that is cold throughout. Dice it finely enough to sit neatly on a small leaf.
- Mix mayonnaise, yogurt, lemon juice and pepper in a bowl.
- Fold in chicken, celery, walnuts and parsley. Chop any loose lettuce trimmings into the salad.
- Spoon onto 8 small lettuce leaves and divide into 4 servings. Chill until served.
