Let’s make it.

  1. Put shrimp, measured water and half the salt in a small saucepan. Cover and cook gently for 4–5 minutes, turning once, until the flesh is pearly and opaque.
  2. Transfer shrimp and their juices to a shallow container and refrigerate until cold, allowing about 60 minutes.
  3. Mix yogurt, mayonnaise, lemon juice, paprika, parsley, pepper and remaining salt. Stir in the chilled shrimp juices.
  4. Divide lettuce and cucumber between small bowls, top with shrimp and spoon over all the sauce. Make 4 servings and serve cold.
