STEP BY STEP

Let’s make it.

  1. Heat the oven to 400°F (200°C). Brush the eggplant slices with the oil and half the salt on lined trays. Roast for 15–20 minutes until flexible, then let cool enough to handle.
  2. Wilt the spinach in a dry covered pan over low heat. Cool briefly and squeeze out excess water, then mix with the ricotta, egg, pepper and remaining salt.
  3. Stir the tomatoes, garlic and basil in a roughly 25 × 20 cm baking dish. Spread a little spinach filling along each eggplant slice and roll up.
  4. Nestle the rolls seam-side down in the sauce. Add any leftover filling between the rolls, sprinkle with mozzarella and bake for 25–30 minutes until the center reaches 165°F (74°C).
  5. Rest for 5 minutes and divide the rolls and sauce into 4 servings.
