STEP BY STEP
Let’s make it.
- Steam the asparagus above simmering water for 4–6 minutes, until just tender. Transfer to a shallow container and refrigerate until cold, about 20 minutes for thin spears.
- Mix the soft goat cheese, yogurt, lemon juice, parsley and pepper.
- Lay out the chilled ham and spread it with the cheese mixture. Divide the cold asparagus between the slices and roll into neat bundles.
- Divide into 4 servings and keep refrigerated until serving.

- Use ready-to-eat ham. Steam rather than boil to limit nutrients lost into discarded water.
- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
