STEP BY STEP
Let’s make it.
- Heat the oven to 425°F (220°C). Mix oil, lemon juice, mustard, garlic, oregano, salt and pepper in a bowl.
- Set aside half this mixture for the broccoli before adding any raw chicken. Coat the chicken with the other half and place on a lined roasting tray.
- Roast the chicken for 10 minutes. Toss the broccoli with its reserved mixture and arrange around the chicken in one layer.
- Roast for another 15–20 minutes, stirring the broccoli once, until the chicken reaches 165°F (74°C) in its thickest part.
- Rest for 5 minutes. Slice the chicken and divide with the broccoli and all tray juices into 4 servings.
Kitchen notes
- If breast pieces are very thick, cut them horizontally to an even thickness before coating.
