STEP BY STEP

Let’s make it.

  1. Heat the oven to 350°F (175°C). Mix the almond meal, butter, 50 g beaten egg and one-third of the salt. Press into a lined 23 cm tart tin and prick the base.
  2. Bake the crust for 12 minutes until lightly colored. Meanwhile, whisk the ricotta with the remaining egg, lemon juice, parsley, pepper and remaining salt.
  3. Spread the raw diced salmon evenly in the crust. Pour the ricotta mixture around the pieces and gently level the surface.
  4. Bake for 30–38 minutes, until the center is set and reaches 165°F (74°C). Cover the pastry edges loosely if they color too quickly.
  5. Rest for 10 minutes, then cut into 6 servings and lift with a broad spatula.
