STEP BY STEP

Let’s make it.

  1. Separate 8 small romaine leaves, wash and dry them. Chop any remaining listed lettuce for the filling.
  2. Dice the cold cooked turkey and avocado. Toss with cucumber, chopped lettuce, lemon juice, oil, salt and pepper.
  3. Spoon all the filling between the leaves and scatter the sesame seeds over the top.
  4. Divide into 4 servings, with two boats per person, and serve straight from the refrigerator.

Kitchen notes

  • If preparing turkey yourself, cook to 165°F (74°C), chill promptly and weigh after cooking.
  • Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
