STEP BY STEP
Let’s make it.
- Heat the olive oil in a wide skillet. Add mushrooms in a loose layer and cook for 8–10 minutes, stirring occasionally, until tender and browned.
- Add garlic and thyme for the final minute, then take off the heat. Stir in lemon juice, salt and pepper.
- Transfer mushrooms and all their juices to a shallow container. Refrigerate until cold, allowing about 60 minutes.
- Fold in parsley and divide into 4 servings. Spoon the chilled dressing over each portion.

- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
