STEP BY STEP
Let’s make it.
- Soften onion in olive oil for 5 minutes in a soup pot. Add garlic and oregano for 30 seconds.
- Stir in tomatoes with their juice, measured water, zucchini, olives, salt and pepper. Simmer for 12 minutes.
- Nestle cod into the broth and simmer gently for 6–8 minutes, until it reaches 145°F (63°C) and flakes easily.
- Add parsley and divide into 4 servings, lifting the fish gently to keep the pieces intact.
Kitchen notes
- Refrigerate leftovers promptly in shallow containers. Reheat to 165°F (74°C), stirring so the whole portion is hot.
