STEP BY STEP
Let’s make it.
- Melt butter in a large pot. Cook mushrooms and onion for 8–10 minutes until the mushrooms have released moisture and begun to brown.
- Add celery, garlic and thyme and cook for 1 minute. Pour in the measured water, then add chicken, salt and pepper.
- Simmer gently for 15 minutes, until the chicken reaches 165°F (74°C) and celery is tender.
- Stir in heavy cream and warm gently for 2 minutes. Take off the heat and mix in sour cream without boiling.
- Divide into 4 servings, sharing chicken, mushrooms and creamy broth evenly.
Kitchen notes
- Refrigerate leftovers promptly in shallow containers. Reheat to 165°F (74°C), stirring so the whole portion is hot.
