STEP BY STEP
Let’s make it.
- Wash and thoroughly dry the lettuce leaves. Divide the leaves and diced cucumber among the serving plates.
- Whisk the peanut butter with the lemon juice, water and half the soy sauce until smooth. If the peanut butter is stiff, use warm water from the measured amount.
- Heat the oil in a skillet. Add the pork and cook for 8–10 minutes, breaking it apart, until browned and at least 160°F (71°C).
- Stir the ginger and garlic into the pork for 1 minute, then add the remaining soy sauce. Remove from the heat.
- Spoon the pork into the lettuce leaves. Share the cucumber, dressing and sesame seeds equally to make 4 servings.
