Let’s make it.

  1. Heat the oil in a large skillet over medium heat. Add the radishes, onion and half the salt. Cook for 10–12 minutes, stirring, until the radishes are tender and beginning to color.
  2. Push the vegetables aside and add the pork. Break it into small pieces and cook until browned and at least 160°F (71°C).
  3. Stir in the thyme, paprika, pepper and remaining salt. Add the spinach and cook until wilted and any excess moisture has evaporated.
  4. Reduce the heat to low and pour the beaten eggs evenly over the hash. Stir gently, then cover briefly until the eggs are set and reach 160°F (71°C).
