STEP BY STEP

Let’s make it.

  1. Heat the oven to 425°F (220°C). Toss the cauliflower with two-thirds of the oil, half the salt and half the thyme on a large baking tray. Roast for 15 minutes.
  2. Rub the tenderloin with the remaining oil, salt and thyme, plus the garlic and pepper. Move the cauliflower toward the edges and place the pork in the center.
  3. Roast for another 18–25 minutes, stirring the cauliflower once. Check the thickest part of the pork and remove it when it reaches 145°F (63°C).
  4. Rest the pork for at least 3 minutes. If needed, return the cauliflower to the oven until golden and tender. Toss it with the lemon juice and the pork resting juices.
  5. Slice the tenderloin across the grain and divide with the cauliflower into 4 servings.
