STEP BY STEP
Let’s make it.
- Heat the oven to 425°F (220°C). Brush pepper panels with oil, season with salt and roast in a shallow dish for 20–25 minutes until soft and flexible.
- Refrigerate the peppers and their juices in a shallow container until cold, about 30 minutes. Keep the skins on; chop any small offcuts.
- Mix ricotta with olives, parsley, lemon juice, pepper, pepper offcuts and roasting juices.
- Divide the filling across 8 broad pepper strips, roll up and divide into 4 servings. Serve chilled.

- Choose cheese made with vegetarian rennet when needed.
- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
