STEP BY STEP

Let’s make it.

  1. Heat the oven to 375°F (190°C). Cook the raspberries with half the sugar for 5–6 minutes, mashing, until reduced slightly. Stir in the chia and cool until thick.
  2. Melt the mozzarella and cream cheese together in a microwave-safe bowl in short bursts, stirring. Let cool until warm, then work in the almond meal, egg, remaining sugar, vanilla and salt. Chill for 10 minutes if sticky.
  3. Divide the dough into 8 portions. Roll each between sheets of baking paper to a circle about 12 cm wide. Share the cooled raspberry filling among the circles, keeping it on one half with a clear border.
