STEP BY STEP
Let’s make it.
- Mix the pork, egg, Parmesan, half the garlic, half the salt and the pepper just until combined. Shape into 16 small meatballs.
- Heat the oil in a wide lidded pan. Brown the meatballs in batches for 5–6 minutes, turning gently; they do not need to be cooked through yet.
- Add the remaining garlic, tomatoes, basil and remaining salt. Bring to a simmer, cover loosely and cook for 12–15 minutes, until the centers of the meatballs reach 160°F (71°C).
- Fold in the zucchini ribbons and simmer uncovered for 3–5 minutes, until just tender. Turn the meatballs carefully to avoid breaking them.
- Divide the meatballs, vegetables and sauce equally into 4 servings and serve immediately.
Kitchen notes
- A vegetable peeler makes wide ribbons; stop at the soft center, then chop that center and add it with the tomatoes.
