STEP BY STEP
Let’s make it.
- Steam cauliflower above simmering water for 8–10 minutes until very soft. Transfer to a shallow container and refrigerate until cold, about 30 minutes.
- Pat off any surface moisture, mash the cauliflower finely, then beat with cream cheese, lemon juice, salt and pepper.
- Fold in the cold cooked salmon and parsley, keeping some visible flakes.
- Divide the spread and cucumber sticks into 4 servings. Keep refrigerated until served.

- The salmon amount is cooked weight. Cauliflower is weighed raw before steaming.
- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
