STEP BY STEP
Let’s make it.
- Steam the tofu above simmering water for 8–10 minutes until hot throughout, following the package cooking instructions.
- Transfer to a shallow container and refrigerate until cold, about 30 minutes. Retain any collected juices.
- Whisk soy sauce, sesame oil, lemon juice and ginger together. Gently toss with cold tofu, juices, cucumber and spring onion.
- Divide into 4 servings, scatter with sesame seeds and serve chilled.

- Use plain firm tofu; flavored tofu changes the nutrition estimate.
- Keep refrigerated at 40°F (4°C) or below until serving. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C). Serve chilled; do not leave a buffet platter out for longer.
