STEP BY STEP
Let’s make it.
- Warm sesame oil in a large saucepan. Gently cook ginger, garlic and half the spring onion for 1 minute.
- Add mushrooms, coconut milk, measured water and soy sauce. Simmer for 10 minutes until mushrooms are tender.
- Add shrimp and cook gently for 4–5 minutes until pearly and opaque. Stir in spinach until wilted.
- Take off the heat and add lemon juice. Divide into 4 servings and scatter with remaining spring onion.
Kitchen notes
- Refrigerate leftovers promptly in shallow containers. Reheat to 165°F (74°C), stirring so the whole portion is hot.
