STEP BY STEP
Let’s make it.
- Heat the oven to 400°F (200°C). Toss tomatoes, olives, garlic, oregano and half the oil in a baking dish.
- Coat chicken with remaining oil, salt and pepper. Nestle it into the tomatoes and scatter feta around it.
- Bake for 25–30 minutes, until the thickest part of each chicken piece reaches 165°F (74°C).
- Lift chicken briefly onto a clean plate. Stir spinach and lemon juice into the hot tomatoes until the leaves wilt; return chicken and its resting juices.
- Rest for 5 minutes, then divide chicken, vegetables, feta and all baking juices into 4 servings.
Kitchen notes
- Salt is kept modest because both feta and olives already contribute salt.
