Let’s make it.

  1. Use a vegetable peeler to make broad zucchini ribbons. Chop the soft centers separately so they cook evenly.
  2. Heat the oil in a large skillet. Add the zucchini centers and cook for 2 minutes, then add the ribbons, salt and pepper. Toss for 2–3 minutes and transfer to a bowl.
  3. Melt the butter in the same pan. Add the garlic and cook gently for 30 seconds without browning it.
  4. Add the shrimp in a single layer, working in batches if needed. Cook for roughly 2–3 minutes per side, until the flesh is pearly and opaque throughout.
