  1. Mix soy sauce, vinegar and measured water. Prepare all vegetables before heating the pan.
  2. Heat half the oil in a wok or deep skillet. Stir-fry chicken in uncrowded batches for 5–7 minutes to 165°F (74°C); transfer with its juices to a bowl.
  3. Add remaining oil, cabbage and pepper. Stir-fry for 4–5 minutes until slightly softened but still crisp.
  4. Add ginger and garlic for 30 seconds. Return the chicken and juices, pour in the sauce and toss over the heat for 2 minutes.
  5. Divide the stir-fry and sauce into 4 servings. Finish with sesame seeds.
