STEP BY STEP
Let’s make it.
- Warm sesame oil in a large pot. Add pork and cook for 7–8 minutes, breaking it into small pieces, until it reaches 160°F (71°C).
- Stir in ginger, garlic and half the spring onion for 1 minute. Add mushrooms and cook for 3 minutes.
- Pour in measured water and soy sauce. Add cabbage and pepper and simmer for 15 minutes until the cabbage is tender.
- Divide into 4 servings and scatter with remaining spring onion and sesame seeds. Keep all the cooking fat in the broth.
Kitchen notes
- Refrigerate leftovers promptly in shallow containers. Reheat to 165°F (74°C), stirring so the whole portion is hot.
